Ingredients:
 | 200 gram
young jackfruit |
 | 150 gram
long beans, cut into 3 cm long pieces |
 | 1 egg plant,
cut into 2 long pieces then cut again into 2-4 pieces |
 | 50 gram
melinjo leaves |
 | 75 gram
melinjo fruit |
 | 5 green
chili, cut into 2 |
 | 1-2 bay
leaves |
 | 2 sdm dried
shrimp, wash dan drain well |
 | 2 cm
galangal, crushed |
 | 1 liter
thick coconut milk |
 | 250 cc thin
coconut milk |
 | salt dan
sugar to taste |
Spice
Paste Ingredients:
 | 7 small
shallots |
 | 3 cloves
garlic |
 | 2 red chili |
 | ½ tsp.
shrimp paste |
 | 1 tsp.
coriander, dried stir fry |
 | 1 tsp.
grated lesser galangal |
 | 1 tsp. salt |

Instructions:
 | Boil the
jackfruit with thin coconut milk until well done. Pour in
the spice paste, dried shrimps, bay leaves and galangal. |
 | Then add the
long beans, green chili, melinjo fruit and leaves as well as
eggplant then pour in the thick coconut milk. |
 | Boil
everything until done. Remove and serve while warm. |
Makes 3- 4
servings with other dishes.
