Ingredients:
 | ¼ cup
sliced onion |
 | 1 clove
garlic, slices |
 | 1 fresh
green semihot chili, sliced thin diagonally |
 | 1 Tbs.
vegetable oil |
 | ½ lb. fresh
mushrooms, sliced |
 | ½ tsp.
sugar |
 | ½ tsp. salt |
 | ¼ tsp.
shrimp paste |
 | 1 tsp.
tamarind, dissolved in 1 Tbs. water |
 | 1 bay leaf (salam) |
 | 1 piece
galangal (laos) |

Instructions:
 | Heat the oil
over medium heat then stir fry the onion, garlic and chili for
about 1 minute or until fragrant. |
 | Add the rest
of the ingredients, mix well and stir fry for three minutes more. |
 | Serve hot or
at room temperature. |
