Stir Fried Mushroom
(Oseng-Oseng Jamur)

Ingredients:
¼ cup sliced onion
1 clove garlic, slices
1 fresh green semihot chili, sliced thin diagonally
1 Tbs. vegetable oil
½ lb. fresh mushrooms, sliced
½ tsp. sugar
½ tsp. salt
¼ tsp. shrimp paste
1 tsp. tamarind, dissolved in 1 Tbs. water
1 bay leaf (salam)
1 piece galangal (laos)
Instructions:
Heat the oil over medium heat then stir fry the onion, garlic and chili for about 1 minute or until fragrant. 
Add the rest of the ingredients, mix well and stir fry for three minutes more.
Serve hot or at room temperature.

Makes 4 servings with other dishes.
